Easy Stuffed Chicken Sandwiches

Are you looking for new ideas for dinner? Let’s face it…. we all get tired of making big labor-intensive meals. What’s wrong with cheating every now and then? And anytime we can get the kids involved in the kitchen, it’s a score! Kids who learn to love cooking young will have that love throughout life!

2 cans Shredded boneless pre-cooked chicken

1 diced bell pepper

1 diced onion

8 unsliced deli-style buns

8 slices of your favorite cheese (we use Swiss)

1 jar of mayonnaise


Bacon bits

Black pepper

Italian seasoning



Pre-heat oven to 350 degrees.

Cut the buns as shown in this photo. I do this by taking a paring knife and cutting down in at an angle and in a circle. The idea is to make a “well” where you are going to layer the ingredients. You make have to pick out more of the insides to get it deep enough and opened enough. You will also want to make the back of the “lid” flatter by removing some of the bread.



Dice your onion and pepper. Open and drain your shredded boneless pre-cooked chicken.



Using a spoon, put a layer of mayonnaise in the bottom of each bun.



Layer in your ingredients:

Half a slice of cheese, shredded chicken, onion, pepper, seasonings, bacon bits. Top off with the other half slice of cheese and more chicken.



Put the lid on each bun and wrap each in foil. Flattened each package down a bit. Place on a cookie sheet and bake for 20 minutes. Unwrap and serve!!! The kids love being able to help make dinner and it’s easy, quick with very little clean up!
