Cajun Sweet Potato Burgers
Servings 4

1 tablespoon Wildtree Natural Grapeseed Oil
¼ cup onion, diced
¼ cup bell pepper, diced
¼ cup celery, diced
1 sweet potato, peeled and cubed
½ tablespoon Wildtree Cajun Seasoning
¼ teaspoon salt
1 egg, beaten
2/3 cup panko
4 buns

Method of Preparation
Heat Grapeseed Oil in a skillet over medium heat. Add the onion, bell pepper, and celery. Saute 5 -7 minutes or until vegetables are tender. Meanwhile cook the sweet potato in boiling water for 7-10 minutes or until fork tender. Drain and mash. Once potato is cooled slightly, add the cooked vegetables, Cajun Seasoning, salt, egg, and panko. Stir together until all the ingredients are combined. Carefully shape mixture into 4 patties. Heat skillet over medium heat and grease. Add the patties and cook for about 5 minutes on each side. Serve on buns with desired toppings and condiments.
