Quick and easy crowd pleaser! Makes enough for 8 patties. It’s pictured with my Corn Bread, which you can find in the Vegetable Dishes category.
- Canola oil, for frying
- 2 cans (6-8 oz.) cooked salmon, boneless and skinless – drain well, but save some of the “juice” in case moisture is needed
- 1 sleeve saltine crackers, mashed
- 2 eggs, beaten
- 1 onion, chopped fine
Heat skillet with 1 inch of oil over moderate heat.
Flake salmon with fork. Add cracker meal and chopped onions and work through with your hands.
Add eggs. Combine all ingredients well with your hands. Form patties about 3 inches wide and 1 inch thick.
Fry until golden brown, about 3 to 4 minutes on each side. Drain on paper towel and enjoy!!
