Raspberry Dessert Bread
4 oz Cream Cheese (softened)
½ C Butter (softened)
1 C Sugar
1 tsp almond flavoring (or vanilla)
2 C Flour
½ tsp baking soda
2 tsp baking powder
½ tsp salt
½ C Buttermilk
1½ C raspberries or marionberries (fresh or frozen)
Mix cream cheese, butter and sugar until fluffy. Add in eggs and flavoring.
In a separate bowl mix flour, baking soda, baking powder, and salt. Combine both mixtures until blended. Add buttermilk without overmixing. Chop your berries (raspberries, marionberries, strawberries) making sure you rinsed and dried first.
Fold berries into mixture carefully. Dough will be thick.
350 degree oven ~ 50 to 60 minutes
9 x 5 greased and floured loaf pan
You can put a glaze on after if you like. I use this one:
2 Tbls melted butter
1 C powdered sugar
2 Tbls milk
¼ tsp almond flavoring (or vanilla)
